Storing your olive oil: So, if you've decided to buy and use olive oil, then here are some tips to do so. Remember that heat and light can turn olive oil rancid. It destroys the antioxidant properties in the oil. So, it's best to buy oil packaged in tinted bottles. And if you see bottles of olive oil displayed in a sunny shop window, then do not buy any from there.

When you do bring a bottle of olive oil home, keep it in a cool, dark place, away from the glare and heat of the sun.
